SHAI CELLARS

Pronounced shy. Shai is the Hebrew word for gift. While exploring wine regions I discovered that the Santa Ynez Valley was in LA’s backyard. I became a frequent visitor to the local wine scene, and realized that Rhone style wines, old and new world, were some of my favorite. I was able to work harvest alongside great winemakers. I was hooked!

In January of 2008 I decided that I was going to make wine that year. I purchased barrels and waited for harvest. October came very fast. With consultant Mikael Sigouin my journey had begun. Since I’m a perfectionist, I am dedicated to making small lot, hand-crafted wines with care and attention to quality and detail.

The 2008 Adome (meaning Red) is my 1st vintage. It is a blend of 65% Syrah and 35% Cab. Only 230 cases were produced. 100% French oak barrels. All Santa Yenz fruit. This wine has great balance, wonderful texture and mouth feel. It can be enjoyed now and for many years to come.

2009 Adome

More rich and concentrated, the 2009 Shai Cellars Adome is a blend of 65% Syrah and 35% Cabernet Sauvignon that spend 18 months in 55% new French oak. Exhibiting rock solid aromas of cassis, smoked meats, leather, licorice, and cedar, this medium-bodied Syrah has a silky, beautifully polished texture, good concentration, and a classically dry, chewy finish.

2010 Adome

65% Syrah Tierra Alta Vineyard & 35% Grenache Harrison Clark Vineyard. An immediate blast of clove and allspice on the nose, followed by layers of plum, blackberry, raisin and licorice.  Savor the aromas and bouquet and then dive in. It is worth the wait. Well integrated oak blends with a spicy lift on palate.  Settling down to a basket of dark berry fruit, followed by an elegant and long finish, belying the alcohol.

2010 Syrah Tierra Alta

100% Tierra Alta Syrah – Noir Clone 50% New French Oak – 50 case production. It enraptures every sensor in your nose. This wine is all about a slow seduction starting with a soft oak kiss and soft licks of cassis, blackberry, spice and just plain lush. The finish on this wine continues to seduce.
